Las Margaritas is one of the most expressive farms of Café Granja La Esperanza in Caicedonia, Valle del Cauca. Spread across 39 hectares, with 33.8 dedicated to coffee and the remainder preserved as natural landscape, the farm is a living laboratory of varietal exploration. Along its riverbanks grow Sudan Rume, Sidra, Bourbon selections, CGLE17 and Geisha, cultivated with particular care.

A vertical demucilager reduces water use, and a multi-compartment silo allows simultaneous controlled fermentations. Yet beyond innovation, Las Margaritas remains deeply connected to nature symbolised by its “Field of Dreams,” a space dedicated to reflection and continuity.

This Geisha lot is harvested at peak ripeness, with cherries floated to isolate the densest fruit and Brix levels measured to ensure optimal sugar concentration. A 72-hour aerobic fermentation enhances aromatic complexity before careful drying in mechanical dryers at 38 °C and stabilisation under climate control.

In the cup, this 2025 harvest expresses refined clarity and layered florality: lavender and jasmine open the profile, followed by orange brightness and tropical starfruit and guava. A delicate chamomile softness rounds the finish. Elegant, precise, and limited in volume a true Icon coffee defined by altitude, varietal integrity, and meticulous craft.
