Description

Tres Dragones comes from Potosi, the historic farm where Cafรฉ Granja La Esperanza began its journey in Caicedonia, Valle del Cauca. The name โ€œThree Dragonsโ€ refers to the three mechanical dryers that once sparked a fire in 2018 an accident that gave rise to a story now embedded in one of the farmโ€™s most distinctive coffees.

Potosi is a 74-hectare estate, with 52 hectares under coffee and 22 preserved as forest. It is the largest farm in Caicedonia and a centre for varietal experimentation. While the farm explores numerous cultivars, this lot focuses on a single Colombia varietal allowing clarity of expression through process.

Cherries are harvested at peak ripeness and sorted by flotation, with Brix measurements taken to assess sugar concentration. A 24-hour aerobic fermentation initiates enzymatic activity, followed by a 72-hour anaerobic fermentation that deepens aromatic structure and complexity. The coffee is then gently dried in mechanical dryers at 38 ยฐC and stabilised under climate-controlled conditions.

In the cup, Tres Dragones is intense and layered: pineapple and jackfruit lead, followed by pear and candy-like sweetness, lifted by subtle whisky warmth. As it cools, hidden berry notes and a delicate chocolate undertone emerge. Structured, experimental, and fermentation-driven a modern Colombian shaped by precision and bold intent.
